Easy 3 Ingredient Flavorful Root Beer BBQ Pulled Pork

My husband had been hearing a lot about root beer pulled pork and really wanted to give it a try. So I searched-up a recipe online and dug out the slow cooker. Despite seeing a lot of negative reviews saying it was either flavorless or no different from standard cooked pork smothered in bottled sauce, we decided to give the recipe a try. Unfortunately, we quickly agreed with the reviews! Yet the short ingredient list and slow-cooker method definitely gave this recipe its share of fans, so I decided to give it another go. With a few tweaks in the directions we turned this ‘talked about’ recipe into something quite tasty and worth adding to the recipe box.

It is more of a sweet pulled pork recipe, but variations are easy. If you wish a spicier version, simply pick a spicier barbecue sauce. Want a twist on the flavor; try a different flavor of pop. I have made this recipe with different types of BBQ sauce as well as various root beer brands and it has turned out well every time.

Ingredients:
1 (3-4 lb.) Pork butt or shoulder (boneless preferred but not necessary)
1 (18 oz.) bottle of barbecue sauce of your choice
12-16 oz. root beer (your choice of brand)

Start by mixing the BBQ sauce with the root beer in the bottom of your slow cooker. Add your pork and set on low for around 8 hours or until the pork sheds easily with a fork. Cooking time might vary depending on your individual slow cooker. Sometimes I give it a jump-start on high for the first half hour to hour to get things up to temperature and going.

Once cooked remove pork and shred, reserving the liquid.

Pour liquid into a pot and reduce down till it thickens. Stir frequently being careful not to let it scorch. Once reduced to desired consistency add your shredded pork. Serve with bread or buns, and pickle slices if you so desire.
