Lemon-Herb Roasted Red Potatoes with a Dutch Oven Variation
If you are following along with our herb posts, here is one of the delicious recipes you can make spotlighting our herb friends. This recipe incorporates several herbs, but gives the spotlight to one of my favorite herb friends, Rosemary! (Adding Flavor with an Herb Garden: Rosemary) As well as incorporating some other healthy garden goodies. If you happen to be garden-less, 🙂 a quick trip to the grocery store works as well.

This dish is flavor-packed and complements any meal. Just pair it up with some roasted chicken, grilled steak or even sautéed shrimp for an easy go-to tasty meal perfect for company, a busy weeknight, or even just a quiet evening at home.
Rosemary’s fragrant aroma working together with the bright tangy flavor of the lemon and the zip from the garlic, make this a soon-to-be healthy family favorite you can feel great about serving!
Ingredients:
3 lbs Red Potatoes, halved but not peeled
1lb fresh green beans
3 Tablespoons Olive Oil (for potatoes)
2 Tablespoon Olive Oil (for garnish)
3 Cloves of Garlic, Minced
Rosemary: 2-3 sprigs if using fresh OR 2 teaspoons dried
Thyme: 1 sprig if using fresh OR 1 1/2 teaspoons dried
3 Tablespoon fresh chopped Parsley leaves
Himalayan Pink Salt (or salt of choice) and fresh ground black pepper
Juice from one Lemon ( you can add the zest for garnish if you desire)
Your favorite pan spray or grape seed oil for greasing pan
Directions:
Start by pre-heating your oven to 400* F. This high heat will insure you get a beautiful browned potato. Lightly grease either a baking sheet or your favorite cast iron pan.
You can use olive oil for this but oil that will take higher temperatures like grape seed oil is preferred. Set aside.

In a large bowl mix together your halved red potatoes, olive oil, garlic, dried rosemary and thyme, lemon juice, salt and pepper.
Carefully toss till combined and pour onto prepared pan.
Arrange your halved red potatoes in a single layer onto the pan with the cut side down.
Place into your pre-heated oven for around 35- 45 minutes or until the potatoes achieve a nice golden brown color and are crispy on the bottoms.
Trim and prep your green beans, then cook green beans in water on stove-top.
Once tender turn off and set aside, leaving in the hot water to stay warm until your potatoes finish.
Once the potatoes have finished roasting, drain the green beans.
Toss drained green beans and potatoes with the butter and garnish with parsley, lemon zest, lemon slices and fresh herb sprigs if desired. Enjoy!
Dutch Oven Variation:
Time to take a night off Mama, for some much needed self-care or munchkin snuggle time! Why not try our dutch oven variation. It takes less than 15 minutes to prep, while the oven does the rest. This one pot, easy clean up meal, works great when camping as well.
Simply combine the previous recipe’s ingredients, and add a few chicken breast or thighs. Bake at 375* for 45 min. or till vegetables and chicken are cooked through.
Feel free to add a few carrots or corn on the cob as well for a complete easy one-dish oven-to-table meal. 🙂

Holy wow, do these ever look amazing!! Typically I roast my potatoes with a curry/cumin mixture, but this looks just as nice, and would be great for when I need a change. Thanks for sharing! 🙂

There really is something wonderful that happens inside a Dutch oven, isn’t there? I used to teach outdoor Dutch oven cooking classes, and it never ceased to amazed me how delicious even the most simple of dishes turned out. Coincidentally, I just made a potato, rosemary, and lemon medley myself this week. It’s such a great combo (and it’s so photogenic, too 😉)!
